調味劑。主要作為綠茶風味改良劑(用量1%～2%)。L-谷氨酸和L-精氨酸雖均非必需氨基酸，但因嬰幼兒對L-精氨酸合成能力很差，故可視作嬰幼兒的準必需氨基酸。L-精氨酸對視網膜組織有改善作用，故可作為藥物使用。
