描述

絲氨酸參與單碳單位代謝。它與半胱氨酸、神經酰胺、磷脂酰絲氨酸、嘌呤和嘧啶的生物合成有關。在細菌中，它參與色氨酸合成。糖異生是重要的生化過程之一，涉及絲氨酸，特別是在反芻動物中。蛋白質磷酸化就是一種利用絲氨酸的事件。甘氨酸是絲氨酸的代謝產物，可作為抗氧化劑和神經遞質。已知 D-絲氨酸可激活大腦的 N-甲基-D-天冬氨酸 (NMDA) 受體。絲氨酸異羥肟酸鹽是一種絲氨酸的結構類似物，可防止絲氨酰-tRNA（轉移核糖核酸）充電，從而減少大腸桿菌中的磷脂和核酸合成。
